In the centuries-old dehesas you can find up to five different types of acorns (oak, cork oak, holm oak, gall oak and Kermes oak) although the most common is from the holm oak. Green when it is born, it acquires a shiny dark brown color when it matures, at the time of the "Montanera".

During its first year of life, it complements its diet based on acorns with other foods available in nature such as wild fruits, roots, mushrooms, herbs, aromatic plants, small invertebrates, nuts...
During the period of the Montanera the animals come to travel about 14 km. daily in the Dehesa to find the acorn, its main food and responsible for its exceptional organoleptic qualities.
