When it all started
The origins of the company date back to the 1920s in the neighboring town of Fregenal de la Sierra. It was then that the great-grandmother Francisquina started a butcher shop in which, by then, some Iberian pigs were slaughtered, from which they extracted and made the meat delicacies and sausages that she put on sale in her own store, located on Paseo del Pilarito.
These beginnings continued in the years following the Spanish Civil War, when grandfather Anastasio Calderón (the “Francisquín”) had a small slaughterhouse in the center of Fregenal.
The Ramiro brothers, José and Anastasio, residing in Jerez de los Caballeros, set up their own factory in the incipient industrial estate of this town in Baja Extremadura. By then they were already selling their pigs live to the company, based in Jabugo (Huelva), of Sánchez Romero Carvajal, as well as to various industrialists from Guijuelo (Salamanca). The progression of this meat industry is evident, which very soon established a prosperous relationship with the most important and famous enclaves since then, and to this day, in the Iberian pig sector.
Already in those early years, when the factory started up, between 15 and 20 percent of production was sacrificed. The rest of the animals were sold live. From the 1980s to the present day, the company Industrias Cárnicas "El Bellotero" sacrifices its entire production.
